Apple Butternut Soup

I made this tonight for dinner and it was delicious! Even my VERY PICKY kids ate it, after about 20 minutes of coaxing them into trying a bite. I would highly recommend this recipe, and the best thing is that it is healthy for you.
When I googled this recipe, there are about a hundred different variations on this soup (adding nutmeg seems to be popular), but this is what I did, (with a few extra notes of mine in parenthesis), and my family enjoyed it.

APPLE BUTTERNUT SOUP

6 Servings Prep: 25 min. Cook: 50 min.

Ingredients
1 small onion, chopped
1 garlic clove, minced
1 tablespoon butter
6 cups cubed peeled butternut squash (I just used one large butternut squash)
1 can (14-1/2 ounces) reduced-sodium chicken broth or vegetable broth (I did vegetable broth)
1 large apple, peeled and chopped (I used a green apple - the tart off sets the sweetness of the squash)
1/2 cup water (I had to add a little extra water to make sure the squash had enough liquid to cook in)
1-1/2 teaspoons minced fresh thyme or 1/2 teaspoon dried thyme
1 teaspoon salt
1/2 cup half-and-half cream

Directions
In a large saucepan coated with cooking spray, cook and stir the onion and garlic in butter over medium heat until tender. Add the squash, broth, apple, water, thyme and salt. Bring to a boil. Reduce heat; cover and simmer for 20-25 minutes or until squash is tender. Cool slightly.
In a blender, process soup in batches until smooth. Return all to the pan; stir in cream and heat through (do not boil). Yield: 6 servings.

Nutrition Facts: 1 cup equals 172 calories, 4 g fat (3 g saturated fat), 15 mg cholesterol, 613 mg sodium, 33 g carbohydrate, 9 g fiber, 4 g protein. Diabetic Exchanges: 2 starch, 1 fat.

I'm sure if you substituted the half n half cream for some milk, it would be that much healthier.

I have a very simialer recipe in my Homemade Soups cook book, but I have been chicken to try it. So now I will try yours and then maybe attempt mine. Good job on the picky eaters:). It is good to know about the green apple, too. Some apples are just too sweet! Thanks for the goodness. See you Thursday at 4:30. I thought after we could just order pizza or we can do a combined dinner??? Let me know your thoughts on that!

Kayla, it looks divine, i will definatly be making that one. We are home and I am needing some social time with my lady friends, I miss all you guys over there already. Lets get together this week!!! we just barely rolled into town tonight!
