
So tonight I tried a new recipe. By all means it wasn't life alternating, but Adalyn and Mieley
both ate it without complaining. That in itself
is a miracle in my household.
I had some
Rhodes loafs that have been hanging out in my freezer for far too long, so I hopped onto their website to come up with an idea of how to use them up. Here's what I found:
Chicken Rolls:
Servings: 6

Bake Time: min
Prep Time: 15 minutes min (not including thaw time)
Ingredients
12 Rhodes™ White Dinner Rolls, thawed
2 cups cooked and diced chicken breast
1 cup cooked and diced ham
1 cup grated Swiss cheese
1/2 teaspoon basil
1/4 teaspoon oregano
marjoram to taste
thyme to taste
salt & pepper to taste
1 egg, beaten
sesame seeds
Instructions
Combine two rolls and flatten into an 8-inch circle. Mix together chicken, ham, cheese and seasonings. Place 1/6th of the filling in the center of each circle. Pull edges up around filling and pinch together to seal. Place smooth side up in a 6-cup sprayed jumbo muffin tin. Brush with egg and sprinkle with sesame seeds. Cover with sprayed plastic wrap and let rise 30 minutes. Remove wrap and bake at 350° F 30-35 minutes or until golden brown.

Now, I had loafs instead of rolls, so I just thawed out those instead and made 3 big rolls to each loaf. Yes, my chicken rolls turned out MUCH bigger than those pictured on their website,

but they were still yummy. Oh and I used my own spices that my family likes, and used Mozzarella cheese instead of Swiss, and put Parmesan cheese on top instead of sesame seeds, but still. . . yummy. I'm sure there are endless ways to alternate this recipe. I think Rhodes rolls are now my new best friends.
Oh and did anyone watch the season premier of "The Biggest Loser" tonight? I love that show.
