So tonight I tried a new recipe. By all means it wasn't life alternating, but Adalyn and Mieley both ate it without complaining. That in itself is a miracle in my household.
I had some Rhodes loafs that have been hanging out in my freezer for far too long, so I hopped onto their website to come up with an idea of how to use them up. Here's what I found:
Chicken Rolls:
Servings: 6
Skills: Beginning
Bake Time: min
Prep Time: 15 minutes min (not including thaw time)
Ingredients
12 Rhodes™ White Dinner Rolls, thawed
2 cups cooked and diced chicken breast
1 cup cooked and diced ham
1 cup grated Swiss cheese
1/2 teaspoon basil
1/4 teaspoon oregano
marjoram to taste
thyme to taste
salt & pepper to taste
1 egg, beaten
sesame seeds
Instructions
Combine two rolls and flatten into an 8-inch circle. Mix together chicken, ham, cheese and seasonings. Place 1/6th of the filling in the center of each circle. Pull edges up around filling and pinch together to seal. Place smooth side up in a 6-cup sprayed jumbo muffin tin. Brush with egg and sprinkle with sesame seeds. Cover with sprayed plastic wrap and let rise 30 minutes. Remove wrap and bake at 350° F 30-35 minutes or until golden brown.

Now, I had loafs instead of rolls, so I just thawed out those instead and made 3 big rolls to each loaf. Yes, my chicken rolls turned out MUCH bigger than those pictured on their website,

but they were still yummy. Oh and I used my own spices that my family likes, and used Mozzarella cheese instead of Swiss, and put Parmesan cheese on top instead of sesame seeds, but still. . . yummy. I'm sure there are endless ways to alternate this recipe. I think Rhodes rolls are now my new best friends.
Oh and did anyone watch the season premier of "The Biggest Loser" tonight? I love that show.
And how about Abby's story?
I hugged my kids just a little bit longer tonight.

Looks yummy!!! I am impressed with the pictures too. Seems like most of my dishes do not look as good as the magazines. Think I will try this on Dad and see what he thinks :)!!. Yes I am into the the Biggest Loser too. Abby is pretty amazing.

That sounds delicious! We always have rhodes in our freezer. I'll have to try that one out, especially if the kids ate it. It's such a challenge to find something that everyone will eat. Take care!
