Another Soup
I've been on a new recipe kick as of lately.
This soup was way good too! I doubled the celery and carrots, and only used 1/2 of an onion (we're not huge onion fans around here).

Brown Rice with Grilled Chicken Salad
Here's another winner new recipe I tried a couple nights ago. Adam and I liked it a lot. However, the girls wouldn't touch it because it had things like brown rice and gasp! vegetables! I followed the recipe pretty much exactly, except I didn't add in the green onions since neither Adam and I care for those. Hope you like it too! Brown Rice Salad with Grilled Chicken Recipe
9 Servings Prep/Total Time: 20 min.
Ingredients
3 cups cooked brown rice
2 cups cubed grilled chicken breast
2 medium tart apples, diced
1 medium sweet red pepper, diced
2 celery ribs, finely chopped
2/3 cup chopped green onions
1/2 cup chopped pecans
3 tablespoons minced fresh parsley
1/4 cup cider vinegar
3 tablespoons canola oil
1 tablespoon lemon juice
1 teaspoon salt
1/4 teaspoon pepper
Lettuce leaves, optional
Directions
In a large bowl, combine the first eight ingredients. In a jar with a tight-fitting lid, combine the vinegar, oil, lemon juice, salt and pepper; shake well. Pour over the rice mixture and toss to coat. Serve immediately or refrigerate. Serve in a lettuce-lined bowl if desired. Yield: 9 servings.
Nutritional Analysis: One serving (1 cup) equals 236 calories, 11 g fat (1 g saturated fat), 26 mg cholesterol, 295 mg sodium, 23 g carbohydrate, 3 g fiber, 12 g protein. Diabetic Exchanges: 1-1/2 fat, 1 starch, 1 lean meat, 1/2 fruit.

8 Magnificent Months
Tora turns 8 months today! She's my little angel and I adore her so!
Yesterday, the older girls were outside playing with friends, so Tora and I had a little bit of one on one time. We were playing with some toys, when I took an ice-cream scoop (from Addy's and Mieley's play food) and started popping it out of my mouth. Tora thought it was so funny! And she even laughed harder when it would hit her. Aahh, good times!

Apple Butternut Soup
I made this tonight for dinner and it was delicious! Even my VERY PICKY kids ate it, after about 20 minutes of coaxing them into trying a bite. I would highly recommend this recipe, and the best thing is that it is healthy for you.
When I googled this recipe, there are about a hundred different variations on this soup (adding nutmeg seems to be popular), but this is what I did, (with a few extra notes of mine in parenthesis), and my family enjoyed it.
APPLE BUTTERNUT SOUP
6 Servings Prep: 25 min. Cook: 50 min.
Ingredients
1 small onion, chopped
1 garlic clove, minced
1 tablespoon butter
6 cups cubed peeled butternut squash (I just used one large butternut squash)
1 can (14-1/2 ounces) reduced-sodium chicken broth or vegetable broth (I did vegetable broth)
1 large apple, peeled and chopped (I used a green apple - the tart off sets the sweetness of the squash)
1/2 cup water (I had to add a little extra water to make sure the squash had enough liquid to cook in)
1-1/2 teaspoons minced fresh thyme or 1/2 teaspoon dried thyme
1 teaspoon salt
1/2 cup half-and-half cream
Directions
In a large saucepan coated with cooking spray, cook and stir the onion and garlic in butter over medium heat until tender. Add the squash, broth, apple, water, thyme and salt. Bring to a boil. Reduce heat; cover and simmer for 20-25 minutes or until squash is tender. Cool slightly.
In a blender, process soup in batches until smooth. Return all to the pan; stir in cream and heat through (do not boil). Yield: 6 servings.
Nutrition Facts: 1 cup equals 172 calories, 4 g fat (3 g saturated fat), 15 mg cholesterol, 613 mg sodium, 33 g carbohydrate, 9 g fiber, 4 g protein. Diabetic Exchanges: 2 starch, 1 fat.

Tora's New Change of Scenery
Adalyn has decided that it's time for Tora to start standing. Tora has NO desire to stand, or crawl (or completely roll over for that matter). But, not to be discouraged, Adalyn props her up against something until she stands on her own for a minute or so.
So now I present to you Tora, who "stands." On her own. Involuntarily.
